A cookie is a small file a site leaves in your browser so it can recognise the same browser later. Local storage does the same job by a different route. Both are covered here, and both are named.
This site keeps the list short. There is no advertising here, so there is nothing on this page that follows you to another site.
Nothing is stored until you choose
Analytics starts denied, so before you answer nothing is written to your device and nothing holds an identifier for you. The banner appears on your first visit, the two buttons carry equal weight, and neither is pre-selected. Decline and the site works the same, every page, every feature. Nothing is withheld from a reader who says no.

Changing your mind
Open cookie choices at the bottom of any page. The banner comes back and whatever you pick replaces what you picked before. Declining after accepting stops the analytics tags on the spot.
Your browser can also block or clear cookies for this site, and clearing site data removes the record of your choice, so the banner will greet you as a new visitor.
Fonts, which are not a cookie
The typefaces sit on this domain and load from it. Everything the letters need is already here. They used to come from Google Fonts, which meant Google's servers saw the address of every browser that opened a page here. That call is gone.
